Madonna Mia! The “Mob” has apparently realized that there is gold to be found in the olive oil business.  Authentic extra-virgin olive oil takes a lot of time, expense, and labor to make. On the flip side, it’s quick, cheap, and easy to doctor it. So enter the “Boys” who have have been involved in scamming us by selling  canola oil disguised as the far more healthy and expensive   option, olive oil.

 

After all these years of purchasing what was believed to be the ” healthy” cooking oil instead of the muck used at fast food dives,  we conceivably have been had!  Okay, so maybe not all the oil we’ve purchased was compromised, but by many estimates at least half of it was.

 

An official investigation into the matter came to the conclusion that four out of five bottles of olive oil are indeed at the very least compromised with cheap alternative oils. Four out of five…WOW, what are the odds that anyone of us has been had?

 

The most common form of adulteration comes from mixing extra virgin olive oil with cheaper, lower-grade oils. Sometimes, it’s an oil from an altogether different source — like canola oil or colza oil. Other times, they blend extra virgin olive oil with a poorer quality olive oil. The blended oil is then chemically deodorized, colored, and possibly even flavored and sold as “extra-virgin” oil to a producer. In other words, if you find a major brand name olive oil is fake, it probably isn’t the brand’s fault. Rather, it’s their supplier’s.

According to author Tom Mueller’s book “Extra  Virginity“ more than half of all olive oil is either completely composed of low quality canola and soy bean oils, or contains some percentage of actual olive oil which is then debased with the aforementioned cheaper canola and soy alternatives.  You really have to  give Tom credit for not being fearful of “swimming with the fish” by exposing one of the mobs illegal money pipelines especially when you realize that the Italian olive oil export industry is worth over 4 billion dollars.,,,yes BILLION!

Why is real Olive Oil important to the Paleo Diet?

 

The health benefits of olive oil are likely due to its unique combination of oleic acid, a monounsaturated fatty acid (MUFA) and polyphenols, also called phenolic antioxidants. Both MUFAs and polyphenols are associated with diverse health benefits including decreased risk factors for heart disease, decreased risk for cancer, diabetes, osteoporosis, and Alzheimer’s as well as improved symptoms associated with rheumatoid arthritis. It’s no wonder olive oil finds itself in the research spotlight. Let’s take a closer look.

Heart Disease: Olive oil intake reduces generalized inflammation as shown by decreased levels of C-reactive protein. Olive oil has also been shown to decrease oxidative damage to LDL cholesterol particles, decrease blood pressure, and improve arterial (blood vessel) function.

Cancer: Oxidative damage by free radicals that can lead to the proliferation of cancer cells is mitigated by both olive oil’s oleic acid and phenolic antioxidants. Furthermore, studies have shown that oleic acid may fight cancer development on a genetic level by altering gene expression.

Diabetes: MUFA rich olive oil is associated with weight loss, improved insulin sensitivity and improved carbohydrate metabolism.

Osteoporosis: Olive oil polyphenols have been shown to increase the concentration of total osteocalcin and other bone formation markers as well as the activity of osteoblasts.

Rheumatoid Arthritis: The polyphenol oleocanthal, prevents the production of pro-inflammatory enzymes the same way ibuprofen does, decreasing pain and stiffness. MUFAs are also associated with decreased symptoms.

Alzheimer’s: In mice, oleocanthal derived from extra-virgin olive oil was shown to remove beta-amyloid plaque from the brain.

 

How to Select and Store Olive Oil

There are several grades of olive oil denoting quality. “Extra virgin olive oil” (EVOO) contains the highest concentration of polyphenols and the best flavor. EVOO is from the first pressing of the olives. No solvents are used and if heat is applied, the delicate flavor along with the integrity of the oil must not be altered. If EVOO is cold pressed, the pressing is slow to generate minimal heat, which preserves flavor. EVOO can only contain up to 0.8% acidity. “Virgin olive oil” is also from the first pressing but contains up to 2% acidity and the flavor is not quite as good as EVOO. “Refined olive oil” has undergone processing that may include heat, solvents and/or filtration to improve the flavor and aroma of poor quality oil. “Olive oil” used to be called “pure olive oil” and is a blend of refined olive oil and virgin olive oil. Blends are typically used in foods labeled “packed in olive oil.” “Olive pomace oil” is refined and used commercially. “Lite”, “light” and “mild” olive oil refers to oil that has undergone fine filtration to remove most of the natural color, aroma and flavor.

Whether you’re cooking with olive oil, using it as a finisher, making dips and dressings or simply drizzling it over food, high quality olive oil is essential to ensuring its integrity and therefore its health benefits. Here are some important things to look for when choosing high quality olive oil:

  1. Buy extra virgin olive oil in a dark bottle that’s been cold pressed.
  2. Make sure there’s a harvest date and don’t confuse this with the best buy date, which is calculated from the date the oil is bottled. After pressing, the olive oil may have been sitting around in storage for a long time going rancid before bottling. Buy your olive oil within six months to a year of the harvest date.
  3. Know where your olive oil comes from. Unfortunately, many European olive oils sold on American shelves are actually blends of lower quality oils, which are sometimes not even olive oil at all! A high quality grower will name the region the olives come from.
  4. A really good olive oil will list the cultivars, or those olives the oil is composed of.
  5. Look for a seal of approval, which certifies truth in product quality. Two major seals to look for are the California Olive Oil Council (COOC), and the International Olive Oil Council (IOOC).
  6. If you’d like to avoid the possible use of pesticides, fungicides and herbicides, buy organic olive oil.

Olive oil will keep for about one year if stored in a sealed container in a cool dark cupboard. You can refrigerate olive oil, which does not alter the quality but may alter the taste. Olive oil solidifies in cold temperatures and to return it to liquid, simply place the bottle in warm water for a few minutes.

 

How can you tell if your oil’s fake?

 

Unfortunately, you can’t simply go by taste alone. So, if you can’t go by taste alone, how can you tell?

First, extra-virgin olive oil ought to be comprised of mostly monounsaturated fat that grows more solid when cold. If you put a real extra-virgin olive oil in the refrigerator, it ought to become thick and cloudy as it cools completely (some oils made from high-wax olive varieties will even solidify). It should be noted, however, that this is not a fail-proof test. That’s because adulterated oils may also become thick and cloudy in the refrigerator. After all, some adulterated extra-virgin olive oils are cut with low-grade, refined olive oil. Those would still clump up. Other adulterated extra-virgin olive oils are cut with just enough of the cheaper oils that they’ll still be mostly olive oil, so they’ll have some clumping, too. If, however, the oil you put in the fridge fails to thicken at all (still appearing as clear and runny as it did at room temperature), then you know something certain: that it’s fake!

Second, extra-virgin olive oil ought to be flammable enough to keep an oil lamp burning. Again, this isn’t a fail-proof test, and for the same reasons. But, it is certain that if your so-called “extra virgin olive oil” doesn’t keep a wick burning, it isn’t extra-virgin at all, but instead contains refined oils.

The “Breastaurant” Hooters is BUSTED.. .thanks in part to  Millennials being less interested in breasts than their elders.

People from the age of 18 to 24 are 19% less likely to search for breasts on pornographic website Pornhub compared to all other age groups, according to an analysis conducted by the website.

For comparison, Pornhub visitors from the ages of 55 to 64 are 17% more likely to search for breast-related content.

Millennials’ pornography preferences seem to be part of a wider trend.

“At the moment, larger breasts are out, though I’m sure they’ll come back,” Sarah Pedersen, professor of communications and media at Robert Gordon University, told Playboy. “We tend to react to what went before.”

For “breastaurants” like Hooters and Twin Peaks, a loss of interest in breasts is bad for business. The number of Hooters locations in the US has dropped by more than 7% from 2012 to 2016, and sales have stagnated, according to industry reports.

Part of Hooters’ struggles are tied to the sales slump that is hitting most sit-down causal-dining chains. But a lack of interest in waitresses’ cleavage — especially when there are breastaurants like Twin Peaks promising more scandalous experiences elsewhere — likely isn’t helping.

Hooters has struggled to win over millennials for some time now. In 2012, the chain attempted to revamp its image with updated decor and new menu items to attract more millennial and female customers.

 

In light of the decline of breasts’ influence in America, it comes as no surprise that Hooters has been emphasizing catering and opened up a fast-casual location with fully clothed servers — women and men called Hoots earlier in 2017.

While porn habits may change, millennials still love chicken wings.

You’re “Pudding” me on, No Cook Dark Chocolate Pudding?  For real, this dark chocolate paleo pudding requires NO COOKING (yes,it’s vegan), and it’s made with an unexpected surprise ingredient — avocado!

It’s amazing to think that pudding can be made from avocado and cocoa powder with a little bit of maple syrup to sweeten it up. Avocado makes a great choice for pudding because of its texture.

It’s absolutely delicious, just over 200 calories, high in protein, low in sugar and takes only 5 minutes to make.

 

No Cook Chocolate Pudding

Ingredients
  1. 2 medium avocado
  2. 1 cup Organic Unsweetened Almond Milk
  3. 3/4 cup Organic Cacao Powder
  4. 1/3 cup Maple syrup
  5. 1 tsp Organic Vanilla Extract
  6. 1/4 tsp Cinammon, Ground
  7. 1 pinch sea salt
Instructions
  1. Remove peels and pits from your avocados, and slice
  2. Put the avocados into your blender, and add almond milk (or coconut milk)
  3. Add organic pure maple syrup, cacao powder, vanilla extract, cinnamon and sea salt
  4. Blend on high until mixture is creamy
  5. Serve in 6 dessert cups and enjoy now, or put into refrigerator to chill for later
  6. Garnish with raspberries and mint leaves if you've got them

We all know water is an essential element in our life, but eating healthy is also important. That is why we want to take the time to share a healthy and delicious chia seed pudding recipe with you.

The recipe calls for the superfood Chia. These seeds are amazing. When you soak the little guys in water they expand to 10 times their size and release a jelly like substance that makes them perfect to make puddings with.

Coconut Lime Chia Pudding

  • 1 cup soaked chia seeds
  • 1/4 cup coconut milk
  • 1 tbsp lemon or lime juice (freshly squeezed)
  • Raw honey (1 tbsp)

Soak chia seeds with water. One part chia, 10 parts water and let them sit for a couple hours, stir occasionally, until the chia has released its jelly-like substance. Usually it takes about an hour or two, but you can leave them overnight if you like.

Stir in the remaining ingredients and enjoy. You can play around with this recipe by omitting coconut milk and adding blended berries.

Coffee – Fueling People and the Future

For many, the morning routine has become somewhat of a ritual – wake up, pull on slippers, head into the kitchen, and make a coffee. For others, the coffee is bought from a cafe on the way to work. Either way, we love our coffee and it helps us to get ready for the day ahead. However, have you ever wondered where all the wasted coffee grounds go? For many years, they were simply a waste product but times are changing and we are now finding a use for them as a renewable energy source.

Coffee Industry – Currently, coffee is right at the top with the largest commodities all across the globe. In fact, over eight billion metric tons of the ingredient is grown each and every year. Whilst some people use the grounds towards compost and other home uses, the majority makes its way to landfills but this could now be changing. Both Nestle and Starbucks are investing into research and new processes that would see coffee grounds put to good use; for example, many experts now believe that the oil found within could contribute tens of millions of liters of biodiesel to the world.

 

Arguably, Starbucks is the largest coffee seller across the US and they purchase 400 million pounds of coffee per year. Therefore, they are seeking a solution to all the waste and the solutions so far include bioplastics, laundry detergents, and many other products. Of course, Nestle has a reputation for incinerating coffee for its own energy but they are now moving one step further by using it for heat to cook products. With 28 factories in total, 22 have this system installed and it is making a huge contribution to our planet. Thanks to a high calorie value, many producers realized that they could have other uses after providing a cup of coffee and studies now show that their fuel value is more efficient than wood; how amazing is this?

According to a representative at Nestle, two of their factories, in China and Vietnam, currently use coffee grounds to fulfill 100% of their energy needs. If the US adopts this system, it could make a huge impact on the industry as a whole. Moreover, Nestle has an aim of having absolutely no waste in its 150 European factories by 2020 and they are certainly taking positive steps towards this target.

 

 

In Cincinnati, there are actually three scientists who are working on using coffee grounds for biodiesel. After investigating coffee grounds for some time, they have discovered that they contain between 11-20% oil which is the same as soybean oil, palm oil, and others that are used as biodiesel. Since coffee grounds are so widely available, we could see a huge impact on the United States when it is introduced. Of course, there are challenges to be seen including the fact that coffee grounds are a solid rather than being a liquid but there are huge steps taking place every day.

Summary – In summary, the planet is looking to find sources of energy where you wouldn’t expect it and they are certainly doing that at the moment. With some of the largest US companies looking into this source, it is only a matter of time before it makes an impact on how we operate. If private consumers and those who drink coffee at home have an outlet to donate their grounds, this will be a fantastic step forward for all those who support renewable energy sources!

Fantastic Fungi Portobello Steaks Chimichurri

Portobello mushrooms are a fantastic ingredient for paleo dishes, because they’re rich in protein and flavor, and they’re versatile enough that you can use them in dozens of different ways.  Packed with nutrition, portobellos are low in fat while high in fiber, selenium, potassium and B vitamins. They are excellent options for vegetarians or anyone looking for a lighter “steak-like” meal. 

Now lets kick these “steaks” up a notch by adding an Avocado Chimichurri sauce!   Chimichurri is an herby, garlicky, tangy, spicy, and very green condiment that is great on all kinds of grilled meats.

Ingredients
  1. MUSHROOMS
  2. 3-4 large portobello mushrooms, stems removed, wiped clean
  3. 1/3 cup balsamic vinegar
  4. 1/4 cup olive oil
  5. 1/2 tsp cumin
  6. 1/2 tsp black pepper
  7. 1/4 tsp smoked paprika
  8. 3 cloves garlic
  9. optional: 1 Tbsp steak sauce (vegan friendly, like A1)
  10. CHIMICHURRI
  11. 1 1/2 cups parsley, finely chopped
  12. 3 cloves garlic, minced
  13. 1 shallot, minced
  14. 1/4 tsp red pepper flake
  15. 3-4 Tbsp olive oil (EVVO)
  16. 3 Tbsp lemon juice
  17. 1/2 tsp each sea salt and black pepper
  18. 1 small ripe avocado, cubed
Instructions
  1. Add portobello mushrooms to a shallow baking dish or large freezer bag. Set aside.
  2. In a small mixing bowl, whisk together balsamic vinegar, olive oil, cumin, black pepper, paprika, garlic, and steak sauce (optional).
  3. Add sauce to the mushrooms and use a pastry brush to brush on all sides. Marinate on one side for 5 minutes, then the other side for 5 minutes.
  4. In the meantime, prepare chimichurri by adding parsley, garlic, shallot, red pepper flake, olive oil, lemon juice, salt, and pepper to a medium mixing bowl and whisking to combine.
  5. Add avocado and toss to combine. Set aside.
  6. Heat a grill or a large skillet over medium heat. Cook on each side for 2-3 minutes, or until caramelized and deep golden brown. Brush on any remaining marinade while cooking to infuse more flavor.
  7. Top portobello steaks with avocado chimichurri serve and enjoy!

Young adult energy drink consumption linked with drug use

Energy drinks are a staple of young adulthood, often used to survive long days or to pull all-nighters studying for exams. But are these drinks also a gateway to drug use later in life?

A University of Maryland School of Public Health study of 1,099 young adults (ages 21 to 25) over five years found there is indeed a link. Specifically, those who drank highly caffeinated energy drinks over time – morSlideshow preview imagee than 51 percent – had a significantly higher likelihood of using cocaine, non-prescription stimulants and being at risk for alcohol use disorder at 25 years old. The study was published Monday in Drug and Alcohol Dependence.

“Because of the longitudinal design of this study, and the fact that we were able to take into account other factors that would be related to risk for substance use, this study provides evidence of a specific contribution of energy drink consumption to subsequent substance use,” first study author Amelia Arria, associate professor of behavioral and community health, said in a statement.

All participants began the study as college students. By controlling for demographics, other caffeine intake and sensation-seeking habits, researchers were able to pin energy drink consumption as a key factor.

Researchers are interested in whether adolescents face a similar risk. Arria recommends future studies home in on this age group as adolescents typically consume energy drinks. Study authors also suggest more research is necessary “to understand the mechanisms underlying the connection between [energy drink] and substance use.”

The Food and Drug Administration regulates soft drinks, but has yet to do the same for energy drinks. They do not have to meet federal labeling requirements for caffeine content or other ingredients that mix with caffeine.

Ingredients
  1. 1 pound (20-25 or 16-20) shrimp, peeled and deveined
  2. 1/2 cup jerk marinade
  3. 2 slices pineapple, cut into 1/2 inch pieces
  4. Jerk Marinade
  5. 1+ scotch bonnet pepper
  6. 3 gloves garlic
  7. 1 tablespoon ginger, grated
  8. 2 green onions
  9. 1 tablespoon thyme, chopped
  10. 1 tablespoon allspice
  11. 3/4 teaspoon nutmeg
  12. 3/4 teaspoon cinnamon
  13. 1 teaspoon pepper
  14. 1 tablespoon stevia
  15. 1 tablespoon oil EVVO
  16. 2 tablespoons white vinegar
  17. 2 tablespoons soy sauce
  18. 1 tablespoon dark rum (optional)
  19. 1/2 orange, juice and zest
  20. 1 lime, juice and zest
Instructions
  1. Puree the above spices together (pepper, garlic, ginger, onions, thyme, allspice, nutmeg, cinnamon, stevia, EVVO, white vinegar, soy sauce, dark rum optional, orange and lime)
  2. Marinate the shrimp in the the half of the jerk marinade for at least 20 minutes,
  3. Skewer the shrimp and pineapple and grill over medium-high heat until cooked, about 2-3 minutes per side.
