- 1 medium yellow plantain, sliced (to yield 1 cup slices)
- 2 tablespoons coconut oil
- 1 cup unsweetened coconut chips
- ⅓ cup coconut flour
- 1 cup coconut cream
- ⅓ c maple syrup
- ½ c coconut butter, softened
- 1 banana, peeled and chopped
- ⅓ cup cocoa powder
- Pinch salt
- Preheat oven to 350°F.
- In a food processor, combine all crust ingredients and process until a smooth dough forms.
- Press the dough into a 9” pie plate.
- Bake the crust for 10-13 minutes.
- Cool completely.
- In a food processor, combine all filling ingredients and process until very smooth.
- Spread in crust and chill for a few hours or overnight.
- Slice and enjoy.
