The recipe calls for the superfood Chia. These seeds are amazing. When you soak the little guys in water they expand to 10 times their size and release a jelly like substance that makes them perfect to make puddings with.
Chia seeds are packed with fiber, protein, calcium, and healthy fats like omega 3’s. Just one serving of this dish can satisfy your sweet tooth and keep your hunger at bay. They are great to add to smoothies and top salads off with.
Coconut Lime Chia Pudding
- 1 cup soaked chia seeds
- 1/4 cup coconut milk
- 1 tbsp lemon or lime juice (freshly squeezed)
- Raw honey (1 tbsp)
Soak chia seeds with water. One part chia, 10 parts water and let them sit for a couple hours, stir occasionally, until the chia has released its jelly-like substance. Usually it takes about an hour or two, but you can leave them overnight if you like.
Stir in the remaining ingredients and enjoy. You can play around with this recipe by omitting coconut milk and adding blended berries.
