“Paleo”ween Stuffed Peppers

With the passing of summer here we are again getting ready for the invasion of ghost, goblins and pumpkins. You can’t escape it, everywhere you look the signs are all over the place… yes get ready for Paleoween!   Here’s a spook-tacular way to impress all your family/guests on the most frightening night pepjpgof the year!  This easy stuffed pepper recipe is simple, quick to make and won’t scare away anyone from wanting seconds!

"Paleo"ween Stuffed Peppers

  1. 4 orange bell peppers
  2. 2 lbs Italian sausage, removed from casing
  3. 1 lb fresh spinach (not baby spinach)
  4. 1 large onion, diced
  5. 1 large tomato, diced
  6. garlic powder
  1. In a large pot, boil enough water to cover the peppers.
  2. While the water heats up, cut a hat off the top of the peppers and remove all the seeds.
  3. Boil the peppers until they start softening, then plunge them in ice water immediately so they retain their color.
  4. Pre-heat the oven to 375F.
  5. Stuffing
  6. For the stuffing, heat a little coconut oil in a pan.
  7. Add the diced onion and cook for a few minutes.
  8. Add the sausage and cook until brown.
  9. Add tomato and spinach to the mixture and season with garlic powder.
  10. When the stuffing is cooked enough, remove from the heat.
  11. Using a small, sharp knife, carve out eyes, nose and a mouth on one side of the orange bell peppers, then carefully stuff them with the sausage-onion-spinach mix.
  12. Bake without the tops for 20 minutes, then add the tops right before serving for a perfect jack-o-lantern look!
