The perfect Jerk Shrimp recipe must start with the right spice blend. Creating an authentic recipe for yourself and your family can be a challenge if you are unable to create an aromatic blend.  Jerk seasoning adds lots of flavor, aroma, and heat to any dish.   Combined with the sweetness of Pineapple you will have your palate exploding with flavor. 

Jammin' Jerk Shrimp and Pineapple

Ingredients
  1. 1 pound (20-25 or 16-20) shrimp, peeled and deveined
  2. 1/2 cup jerk marinade
  3. 2 slices pineapple, cut into 1/2 inch pieces
  4. Jerk Marinade
  5. 1+ scotch bonnet pepper
  6. 3 gloves garlic
  7. 1 tablespoon ginger, grated
  8. 2 green onions
  9. 1 tablespoon thyme, chopped
  10. 1 tablespoon allspice
  11. 3/4 teaspoon nutmeg
  12. 3/4 teaspoon cinnamon
  13. 1 teaspoon pepper
  14. 1 tablespoon stevia
  15. 1 tablespoon oil EVVO
  16. 2 tablespoons white vinegar
  17. 2 tablespoons soy sauce
  18. 1 tablespoon dark rum (optional)
  19. 1/2 orange, juice and zest
  20. 1 lime, juice and zest
Instructions
  1. Puree the above spices together (pepper, garlic, ginger, onions, thyme, allspice, nutmeg, cinnamon, stevia, EVVO, white vinegar, soy sauce, dark rum optional, orange and lime)
  2. Marinate the shrimp in the the half of the jerk marinade for at least 20 minutes,
  3. Skewer the shrimp and pineapple and grill over medium-high heat until cooked, about 2-3 minutes per side.
